Kale'ing Em' Softly

Turn that dry and crunchy kale into a delicious Caesar style salad packed with protein filled chickpea bites

  • 1 bag of chopped kale

  • 1 tbsp nutritional yeast

  • 3 tbsp tahini

  • ¼ cup lemon juice

  • 1 tbsp soy sauce

  • 1 tbsp maple syrup

  • 1 tsp Salt

  • ¼ tsp pepper

  • Chickpea Croutons:

  • 1 can chickpeas, drained and rinsed

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried oregano

  • 1 tsp dried basil



1. set oven to 400F

2. In a large bowl add your kale, nutritional yeast, tahini, lemon juice, soy sauce, maple syrup, salt and pepper and mix salad together and set aside

3. In a separate bowl mix chickpeas and olive oil and lay on a lined pan and place in the oven for 10-15 minutes

4. When chickpeas are crispy and done toss in the garlic, onion powder, dried oregano, and basil

5. Serve mixed kale topped with chickpea croutons. Enjoy!
